We have been loving nachos around here lately. And I am always looking for hands free ways to cook. My little two spent some time at my parents and suddenly like tomatoes now too, so that has been a fun addition to our nachos. Basically, I make taco meat and fixings in my instant pot and then bake them in the oven on chips.
Ingredients:
2 lb ground beef (bison, turkey, anything will work)
1 tbsp coconut oil, ghee
12 oz can of diced tomatoes, no salt added
diced bell pepper
diced onion
taco seasoning ( paleo leap has one I premake and keep on hand)
bag of plantain chips (I get mine at Trader Joe’s)
toppings of your choice:
green onion
avocado
sour cream
cheese
diced olives
cilantro
Directions:
Toss oil into instant pot on saute
Add onions and peppers until onions become translucent
Put in ground beef and taco seasoning
Break up meat until it is in crumbles
Add tomatoes, turn off sauce function
Set on Meat
When done, put plantain chips on lined baking sheet and top with ground meat mixture.
Add cheese, if desired
Bake at 350 for 5-10 minutes
Add any additional toppings and enjoy
