Michelle over at Nom Nom Paleo has been turning lots of her recipes into Instant Pot ones, and man, did this one deliver.
Ingredients (serves 2):
- 1 rack of grass fed beef back ribs
- Dry rub of choice
- Kosher salt
- ¾ cup water
- 4 ounces of unsweetened applesauce
- 2 tablespoons coconut aminos
- 1 teaspoon fish sauce
Directions:
Pat ribs dry with paper towel and sprinkle seasoning on both sides.
Wrap in aluminum foil to sit for at least 2 hours, I did mine for 6.
Turn on broiler, and cut ribs to fit in pot, and place them on wire rack on baking sheet.
Broil on each side for 1-2 minutes, until charred.
Stir applesauce, fish sauce, and aminos in bottom of instant pot, and place trivet inside.
Puts ribs in Instant Pot on Meat/Stew for 20 minutes.
Release pressure naturally.
Place ribs back on baking sheet.
Simmer liquid left for about 5 minutes, and use that to baste ribs.
Return ribs to broiler for another 1-2 minutes.
